Pork, Cured Ham - IN FREEZER
Each package contains approximately 4 or 5 pounds of cured ham. The butcher cured this batch in the conventional way, non-organic. It contains: water, salt, brown sugar, sodium erythrobate, sodium nitrate. Order a Fresh Ham (i.e., Pork Roast) to avoid those ingredients.
Pork, Fresh Ham - IN FREEZER
Each package contains approximately 4 or 5 pounds of fresh (not-cured) ham. To ensure only the best ingredients in your cured ham, cure it yourself with organic ingredients and let us know your favorite method (dry or wet) and recipe to share with others.
Pork, Sliced Fresh Bacon (a.k.a Side Pork) - IN FREEZER
Each package contains approximately 0.7 to 1.5 lbs of side pork. Sliced fresh bacon is also call sliced side pork by some butchers. "Fresh" means that it is "not cured or smoked" to avoid the nitrates, msg, corn syrup and sugar. It is cooked the same as bacon, until it is crisp, usually with salt and pepper. Add maple syrup or other flavorings if you like!

25 lbs of pastured pork in approximately one pound packages. A package has one or two chops.

Pork, Maple Breakfast Sausage
Healthy pastured pork and healthy ingredients: ground pork, organic onion, sea salt, dry sage, dry mustard, black pepper and pure maple syrup. We control this reciple, so let us know if you think we should adjust anything.
Pork, Sage Breakfast Sausage - IN FREEZER
The ingredients include Bartlett Farms pastured pork mixed with a conventional (not organic) butcher recipe. It tastes great, but not our preferred ingredients. Here is why we need an organic butcher in North Dakota: "salt, dextrose, monosodium glutamate, flavorings including oil of sage, .10% of each; BHA, BHT and Citric Acid, <2% silicon dioxide added to prevent caking, protein: 2.46%, packed in collagen casings."
If you don't want these ingredients, you could buy our ground pork and use a more healthly recipe to make your own sausage in patties.

Cuts include chops, roasts, tenderloin, fresh ham roasts (not cured), fresh bacon (sliced side pork, not cured), and ground pork. We chose not to have these cured because of the ingredients added to cured pork.

Pork Fat Trimmings (2 lbs)
2 lbs packages of ground fat trimmed from pastured hogs, perfect for making lard, which is known as a good source of vitamin D and healthy fats for heart and brain functions. A tablespoon of lard from a pasture-raised hog has about 1000 IU of Vitamin D. It makes fried foods taste great too!

Beef fat (suet) in 2 lb packages. Popular for use in homemade sausage, bird feed, candles and rendering into tallow (lard). The health benefits of cooking with 100% grass-fed tallow is from the high omega 3 and CLA content similar to fish.
